This easy Greek Quinoa Salad is perfect for those times when you want a healthier side dish and don’t want to fuss. You will love the all the fresh ingredients with crunchy cucumbers, tangy kalamata olives, juicy tomatoes, garbanzo beans, red onion, green peppers, feta cheese and tossed with a lemon vinaigrette dressing.
Fresh and healthy is the name of the game with this easy side dish salad – seriously no April Fool’s tricks! It’s light, flavorful and would go great alongside some grilled chicken or fish. Also with it almost being picnic season (wishful thinking on my part), it would be perfect to take along. You might want to even make them in small canning jars and just hand one to each person – just add dressing, shake and eat!
This weekend we had the grandkids visiting for Easter and as mentioned it was also April Fool’s Day. Well our 4 1/2 year old granddaughter thought it would be fun to play a trick on me and squirt with the sink sprayer. Not that is was a really a trick but I played along. But then her Papa said why don’t we tape the handle down so that the next person that comes along gets wet. Of course Emily was all game for that! The funny part was as soon as her dad came in the kitchen, she said dad I want a glass of water from the sink…yes, he saw the taped handle but also played along. I don’t think I ever heard such a belly laugh from her. Even Alex who is 2 thought it was quite funny!
Later in the day we went to my friend’s house for a wonderful Easter dinner. I love all the fixings that go along with the ham – cheesy potatoes, green bean casserole, ambrosia salad and her homemade buns. We ended dinner with a couple decadent desserts. YUM. It was great but I know this week I’ll need to get back on track and I think this salad will do the trick. Since I am in a salad mood, I may make my Italian Lentil Salad and Fresh Fruit with Arugula too.

Greek Quinoa Salad
This easy Greek Quinoa Salad is perfect for those times when you want a healthier side dish and don't want to fuss. You will love the all the fresh ingredients with crunchy cucumbers, tangy kalamata olives, juicy tomatoes, garbanzo beans, red onion, feta cheese and tossed with a lemon vinaigrette dressing.
- 2 cups cooked quinoa (according to package)
- 1 cup cherry tomatoes, halved
- 1 cup garbanzo beans (rinsed well)
- 1 cup cucumber, diced
- 1/2 cup kalamata olives, sliced
- 1/4 cup red onion, minced
- 1 cup green peppers, diced
- 1/2 cup feta cheese
- 1/2 cup olive oil
- 1 teaspoon Dijon mustard
- 1/2 clove minced garlic
- 1 tablespoon fresh lemon juice
- 1/4 teaspoon lemon zest
- 2 tablespoons champagne vinegar
- 2 tablespoons honey
- Divide quinoa on 4 salad plates
- Top with one-quarter of the tomatoes, cucumbers, red onion, garbanzo beans, green pepper, kalamata olives and feta cheese
- To make dressing combine the olive oil, lemon juice, mustard, garlic, zest, vinegar and honey in a food processor. Add salt and pepper to taste
- Drizzle on salad and serve immediately
