EASTER MONSTER COOKIES #EasterSweetsWeek

These flour-free Easter Monster Cookies are loaded with chocolate chunks, festive M&Ms, peanut butter and oats.  Not only will you satisfy your sweet tooth but they are perfect to serve on your holiday treat table!

This post and recipe was created for #EasterSweetsWeek!  I did receive samples by some of the sponsor companies but opinions are 100% mine.

You can never go wrong with chocolate especially when it is in cookies, right?  I especially love when they come out of oven, cooled a bit, then take a bite so I can get all the warm gooey chocolate in my mouth!  I definitely had a slight addition to these because they are that good.  I had planned on bringing some to work, maybe give some away to the neighbors, but those plans did not come through.  I guess I’ll need to make another batch soon!

While we all know that cookies are a major hit, you may also be interested in some other desserts for Easter like these Mini Lemon bundt cakes or a recipe I made last year called Lemon Mousse no-bake cheesecake.  You can never have too many desserts!  I do want to thank Dixie Crystals and Adam’s extract for sending me samples that I did use in this recipe.

Easter Monster Cookies

Serves 4 dozen Prep Time 10 mins Cook Time 11 minutes

This loaded monster cookie will be a hit at your holiday table!

Ingredients

  • 1 1/2 cups peanut butter
  • 1 cup packed light brown sugar
  • 1 cup Dixie Crystals sugar
  • 1 stick soft butter
  • 3 large eggs
  • 1 tablespoon Adam's vanilla extract
  • 4 1/2 cups quick oats
  • 2 teaspoons baking soda
  • 1 cup chocolate chunks
  • 1 cup M&Ms (I used pastel for Easter)

Directions

  1. Preheat oven to 350 and line cookie sheets with parchment paper
  2. Combine the peanut butter, brown sugar, sugar, and butter in a large bowl and beat until well combined
  3. Mix in vanilla and eggs
  4. Stir in oats and baking soda
  5. Add chocolate chunks and M&Ms - mix well but gentlyl
  6. Drop 3 tablespoons of dough onto sheets and add a few M&Ms on to[p
  7. Bake for 11 minutes then cool for 5 minutes on sheet; transfer to wire rack to cool completely
  8. Store in airtight container

Recipe Notes

Cookies won't appear to be done but they are and will set up when cooling.  You don't want to overbake them or they will get too hard

You want a nice chewy bite!

Feel free to use other colored M&Ms for different holidays
