Club Cracker Bars


Don't say I didn't warn you if you decide to make these Club Cracker Bars.  Remember you have been warned!  Enter at your own risk!

Have I piqued your curiosity?  Or maybe you have had these before and know what you are getting yourself into!  If I had to give these another name, I would call them crack - yep as in addicting.  They are that good - salty, sweet and chocolately!  Think potato chip and how you can't just have one!

Club Cracker Bars

The most addicting bars!
prep time: 5 MINScook time: 10 MINStotal time: 15 mins

INGREDIENTS:

  • 1 package club crackers
  • 1/2 cup peanut butter
  • 1 cup crushed graham crackers
  • 1 cup packed brown sugar
  • 1/3 cup milk
  • 1 teaspoon milk
  • 6 oz chocolate chips
  • 3 oz butterscotch chips
  • 3 tablespoons peanut butter

INSTRUCTIONS:

  1. Line a jelly roll pan (10x15) with parchment paper and then place one layer crackers (touching) on entire pan
  2. In a medium sauce pan bring to boil butter, graham crackers, brown sugar and milk and boil for 7 minutes stirring often; remove from heat and stir in vanilla
  3. Pour on crackers then place another layer of crackers on top
  4. Melt in a small saucepan over low heat the peanut butter, chocolate and butterscotch chips.
  5. Frost the top layer of crackers and place in refrigerator to harden (store in refrig also)
  6. Cut into desired shapes (I try to follow line of crackers)

I haven't made these bars in years but last week the DIY Guy was having his pool buddies over for their monthly game and I offered to make a sweet treat.  I knew it didn't have to be too fancy but just something they could munch on while they were playing.

How enticing does this look?  Do you wish one would jump off the screen and into your mouth?  Well, you will definitely need to make a batch for yourself - they won't disappoint.

Now I'm not the only one who made food for the party.  The DIY Guy always makes this Crockpot Beef Stew that Da Guys (that's what they call themselves) really look forward to.  He does a great job with it and it was especially appreciated this time as the temps were in the single digits that night.

I'm pretty impressed that he makes the food, sets it all up and even cleans it all up!  I'm happy to make the sweet treat and will need to be thinking what to make next time when it comes around here again in about 6 months...

We did have some leftovers that we both brought to work to share... too dangerous to leave at home.
