These Veggie Dip Poppers are made out of creamy dill cream cheese, rolled in crushed veggie chips that you can pop into your mouth. Let’s party!
Are you with me and ready to dump the last of the Halloween candy (plus just the yucky candy is left, right?) And instead let’s start thinking how we want to celebrate holiday gatherings. If you like veggies and dip, then these little popper appetizers are for you. Instead of using veggies to dip, they are used as a stem to pop them into your mouth. Just a different take than having a veggie tray and these look cute on your party table. Some years we have friends over, get invited to gatherings or both. It’s a good idea to have some quick appetizer recipes on hand to get the party going!
As someone who could live on appetizers, I’m also looking for new recipes but also like my tried and true ones. Christmas Eve we have our good friends over and we do a traditional Italian meal with no meat (also known as the Feast of the Seven Fishes). One of my go to appetizers is this Cheesy Crab Dip and it usually disappears quite quick. It’s great way to start off the night. It can be assembled earlier in the day and baked right before guests come over. And as mentioned, you won’t need to worry about leftovers! Another make ahead appetizer that has been in my party rotation is this Southwest Cheeseball. I’m the one who can’t stop eating it! It’s really good and a party pleaser.
These poppers can also be mostly made ahead. I found that rolling the bites into the crumbs right before serving helps keep coating crispy. If you prefer, you could use sesame seeds to roll them into and totally make them ahead. I liked how the saltiness of the chip went with the cream cheese. Plus they kind of look like sunshine on a plate!
- 8 oz softened cream cheese
- 1 tablespoon Hidden Valley dry dill dip (provides additional seasoning)
- 1 tablespoon dried dill weed
- 1/4 teaspoon black pepper
- 1/2 cup crushed veggie chips (or sesame seeds)
- Carrots, celery and snow peas as stems
- Combine the cream cheese, dip mix, dill and pepper
- Shape into balls (about one tablespoon)
- Roll in crushed chips and add a veggie stem
- Serve immediately
