OVERNIGHT PUMPKIN SPICE OATMEAL

Your morning will start out perfectly with this overnight pumpkin spice oatmeal.  So easy to make and especially delicious when topped with a drizzle of maple syrup and pecans.

I hope by now you have put away your white clothes (yes, no white after Labor day!) and are turning your thoughts to fall.  Because once your turn your calendar to September, it is getting to be cooler days and all access pumpkin season!  I can't think of a better way to welcome fall (and get your day off to a great start) than making overnight oatmeal.  Just toss the ingredients into a big bowl, let sit overnight and enjoy in the morning.  I bet you can even sleep in a little later too -  now that sounds really good to me too.

I hope you had a really great summer.  Ours went by in a blur - one minute is was Memorial Day and then next it was Labor Day.  We were super busy about every weekend and I didn't even blog much this summer as you may have noticed.  But now I am ready to get back in the saddle and planning out some recipes to try.  I have to admit most of them involve pumpkin but tis the season for that so be sure to stop back to see what else I will be making.  Feel free to leave a comment and give me some more ideas too.

In past years I have made some other pumpkin recipes like this easy Pumpkin Banana Quick Nut bread and a main course dish with Pumpkin Gnocchi (a little putzy to make but so worth it!)  I know soon too I'll be needing to think about apple recipes.  Our lone tree in the yard looks pretty loaded this year.  Can't wait for that fall favorite either!

Overnight Pumpkin Spice Oatmeal

Your morning will start out perfectly with this overnight pumpkin spice oatmeal.  So easy to make and especially delicious when topped with a drizzle of maple syrup and pecans.
prep time: 10 MINScook time: 0 MINStotal time: 10 mins plus overnight time

INGREDIENTS:

  • 1/3 cup vanilla yogurt
  • 1/2 cup pumpkin puree
  • 1 cup old fashioned oats (not quick)
  • 2/3 cup milk (any kind - soy or almond too)
  • 1/4 teaspoon cinnamon
  • 1 teaspoon vanilla paste (or extract)
  • 2 teaspoons maple syrup (plus more for drizzling)
  • 1 teaspoon pumpkin spice
  • Chopped pecans (optional)

INSTRUCTIONS:

  1. In a bowl combine all the ingredients (except pecans)
  2. Cover and let sit overnight in the refrigerator
  3. Enjoy the next day - top with pecans and drizzle with maple syrup if desired
