Welcome to Best of the Weekend!  Wow, it is kind of sad that the summer is coming to an end - where did the time go!  I hope you had a great summer and will be enjoying the Labor Day weekend.  We have the kids coming home and will be going to our friend's annual clambake.  I still need to come up with a dessert and hopefully as you are reading this I have it made!  I think this might be the 20th year we have attended - it is so much fun.  Stop back next week to see what I made.

I'm pretty excited to share this salad with you today and I hope you are as wowed as I am with it.  It's one that a local restaurant has on their menu and after having it twice this past month, I was determined to make it at home.  I fell in love with the flavors, textures and of course the ingredients.

Back to baking this week with these Old Fashioned Peanut Butter Cookies.   I had a craving for some PB cookies and thought I would look through my mom's handwritten cookbooks to find her recipe.  I searched through the stash of notebooks I had but no luck!  So now I'm not sure if her recipe came from a cookbook or one she didn't happen to write down.  After some searching, I came across this recipe that seemed like a winner to me and it was!

Welcome to Best of the Weekend!  I for one am glad this week is coming to an end - remember last week when I said we had NO plans and that I wanted to go to see the Hundred Foot Journey?  Well, my weekend was interrupted with some virus thing I picked up and have been pretty much down and out the entire week.  Major bummer!  But this weekend we have plans to head to our friend's cabin in northern MN - just some R&R time and that sounds really good to me.

The zucchini are coming, the zucchini are coming!  It's that time of year where that ONE plant you have in your garden is exploding with lots of veggies and you need something to do with them!  That's where this recipe of Zucchini Fritters will help you out.  Yep you can make bread, muffins or even a vegetarian lasagna but this side dish is so easy to do and one of my favorite ways to enjoy the mass producing veggie!

Welcome to Best of the Weekend!  Another week and another time to see what you have been up to!  Is it just me or is time just whizzing by?  It's Monday then it's Friday with the weekends a blur!  This is one of the rare weekends we have no plans... nothing on the calendar.  Would I really would like to do - hint hint DIY Guy - is go see the movie The Hundred Foot Journey (of course it has to do with food!)  I heard it was great - stop by next week so see if I went.
