Welsh Cakes

If you are of Welsh heritage, you might have tried Welsh Cakes or at least heard of them.  My dad is part Welsh and I've had them before but have never made them.  As luck would have it, our friend is and after being out to dinner with them recently, we headed back to their place for dessert.  Dave had just made a batch, of which I had a few, and then they were kind enough to send some home with me.  Of course I had to take some photos and even better, he shared his recipe with me!

If you are looking for an easy breakfast that is a little lighter on the calorie side, this crustless quiche is for you.  It's loaded with veggies, a bit of ham, cheese and comes together quick.  You will love the ease of making it and no need to deal with crust.  Even though real men don't eat quiche :)  We had these yesterday and will definitely be making again soon!

TGIF - really and finally!  It's been a busy week and I'm looking forward to some R&R!  After I write this post this morning, I'm going to get shined up and go shopping!  Last Sunday I painted my living room and the color is called Warm Caramel.  So now I'm in the market for some new wall art, pillows, mantle decorations and drapes.  So that is why the DIY Guy goes nervous when I paint... it's not the $35 for the gallon, it's all the other stuff he says.  I have to admit I resemble that remark :)  But at least I'm not looking for new furniture!!

Top of the mornin' to you with these buttery and delicate shortbread cookies with homemade creamy lime curd!  Yes, it really is lime and since I don't live in a Dr. Suess world, I was unable to get some green eggs... lol.  I had to make due with yellow yolks!  Trust me though, one bite and you will definitely taste the tangy lime flavor!

Yum - your taste buds will thank you when you make this Pear Gorgonzola Flatbread.  And you might want to make it pronto!  Recently we went out to dinner with the "kids" at a local restaurant called The Yard House.  While we were deciding what tasty beverages we wanted, our SIL ordered a pear gorgonzola flatbread for us to munch on.  We all loved it and knew I could come close to making it at home.

Today I have the winter doldrums... it's super windy, cloudy, cold and just that time of year where you are yearning for spring.  It's almost March and I hope we get an early one.  This weekend here in town is the ICE Social.  An outside event with lots of ice sculptures and ice bars.  It's definitely a pretty site and we've gone in the past but I'm not feeling it this year!  I think staying home and seeing what you link up is what I need for warmth!!
