Lemon Poppy Seed Donuts

So how are your new year's resolutions going?  Sticking to a healthier routine?  How about today we take a teeny weeny break as I tempt you with these baked Lemon Poppy Seed muffins?  Sorry :) but I personally just needed a little something sweet this week and my love of lemons was calling my name.  Remember they are baked and not fried so one or two won't break the diet!

This week I've been pretty good sticking to a routine.  I've gone to the club three mornings this week. I get up at 5 and go before work - yep it's tough especially since it is so cold here.  At least I have an electronic car starter and get the vehicle nice and toasty before leaving so my body isn't shocked too much!  I just know that if I don't go before work that I won't go afterwards.  After a couple weeks, it becomes a (good) habit.

I think I've done pretty good eating too.  Just sticking to 3 meals a day (no second helpings) and 2 light snacks.  Oh and did I mention that I got a fitbit for Christmas?  I really didn't think I would ever want one but it does help keep me motivated.  I'm also motivated since we are headed to Mexico in a couple weeks.  I know I should have started earlier but every little bit helps, right?

Baked Lemon Poppy Seed Donuts

These baked lemon poppy seed donuts are just a nice treat to satisfy your sweet tooth without too many calories.

INGREDIENTS:

  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 tablespoon poppy seeds
  • 1/4 teaspoon salt
  • 2 tablespoons canola oil
  • 1 egg
  • 1/3 cup sugar
  • 1/4 cup milk
  • 1/4 cup lemon yogurt (I used Greek)
  • 1 teaspoon vanilla paste (or extract)
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon lemon zest
  • Glaze - 2 tablespoons melted butter, 1 cup powdered sugar, 1 tablespoon fresh lemon juice, 1-2 tablespoons milk (to desired consistency)

INSTRUCTIONS:

  1. Preheat oven to 350; spray donut pans with PAM (or vegetable spray) I used one 6 form donut pan and a mini pan
  2. In a medium bowl combine the flour, baking powder, baking soda, salt and poppy seeds
  3. In another medium bowl stir together the oil, egg, sugar, milk, yogurt, vanilla paste, lemon juice and zest.
  4. Stir the wet ingredients into the dry bowl and just stir until combined.
  5. Place the mixture into a small baggie and snip off the end
  6. Fill the donut forms about 1/2 way
  7. Bake for about 10 minutes (mini pans will be done in about 8) I used a toothpick and took out when no crumbs remained.
  8. Remove and cool on wire rack
  9. Make glaze by combining the melted butter, powdered sugar, lemon juice and milk
  10. Stir to combine and dip each donut into glaze and place on rack to dry
  11. These should be served within two days.
