Today I’m sharing a treat you want might to make for Cinco de Mayo called Mexican Hot Chocolate Cookies. Are you intrigued? Keep reading!
I first stumbled across this cookie last winter from my friend Carrie as we both participated in an on-line cookie exchange. We were all assigned someone to swap a recipe with, make it and do a blog post. All the cookies looked great but this one in particular caught my eye and have been wanting to give it a try ever since.
- 2 1/4 cups all-purpose flour
- 1/2 cup unsweetened baking cocoa
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 teaspoon chili powder
- 1 cup butter, room temperature
- 1 1/4 cups brown sugar, packed
- 1 cup sugar
- 1 teaspoon vanilla
- 2 eggs
- 1 cup chocolate chips
- 1 cup mini marshmallows, frozen
- Whisk together the flour, unsweetened cocoa, baking soda, salt, chili powder and cinnamon in a medium bowl and set aside.
- Cream the butter, brown sugar, and regular sugar until creamy in a large mixing bowl then add in one egg at time until light and fluffy. Add vanilla
- Take the flour mixture and slowly add it to to the butter mixture and mix until just combined. Stir in chocolate chips and frozen marshmallows.
- Refrigerate the cookie dough for 1 hour.
- Preheat your oven to 375 degrees. Line a baking sheet(s) with parchment paper.
- Roll tablespoon size balls onto the prepared baking sheet spaced about 1 1/2 inch apart.
- Bake for 8-10 minutes.
- Allow to cool on baking sheet for 10 min then finish cooling on a wire rack.
*I made one slight change by adding a 1/2 teaspoon of chili powder – just to give it a slight hint of spice.
I have a feeling I did something wrong though – my cookies turned out too flat. I’m not sure if I was distracted and didn’t put in the right amount of flour, left out the baking soda or what I did. I was surprised when I saw them flattening out in the oven. Hmmm, oh well I’ll give them another try but be assured the flavor was great and The DIY Guy still brought them to share at work and there weren’t any left to bring home!
