Friday our good friends Chris and Denny came to visit and spent the night. We met them when we moved to Minnesota in 1992 as they lived next door and we became friends quickly. During the years, we’ve had good times including – Block parties, Halloween parties, Christmas parties, New Year Eve’s parties… well you get the idea… Sadly they moved to the cities which was good for them; but luckily for us we have kept in touch!
Soon after they arrived we had ourselves a little Happy Hour!
A few snacks (Cheese from Zzest)
For dinner I made a dish on the menu at City Cafe (description) Maple Roasted Chicken Breast with Vermont white cheddar fondue; topped with fresh greens, red onions, cranberries, pecans and a warm bacon vinaigrette with garlic mashed potatoes.
Marinate the chicken in pure maple syrup for at least 3 hours
Prepare the garlic mashed potatoes by roasting about 2 garlic bulbs
Meanwhile I made a cheese fondue and a maple glaze (not pictured) along with a spring salad tossed with craisins, sugared pecans (Trader Joe’s), red onion and raspberry vinaigrette dressing. Here is the assembly of the dish:
After dinner we had dessert (will post another day) and played cards and Scrabble
