All day I was thinking – naw – not going to make dinner tonight – we ate so much on Easter Sunday. But as the day wore on, all I could think of was a salad with fresh ingredients would really hit the spot. And then I thought that John would probably like some meat with it so I came up with this sorta Greek salad.
I took some boneless chicken, cubed it and sprinkled with Greek seasoning and grilled it:
