What’s better than one pizza – why two of course. Should they be the same or different….from earlier in the week I had leftover asparagus and leeks to experiment with (white pizza). Then wanted to also make a margarita style pizza too (red). So off I went first to Zzest (a great little market with awesome ingredients…take a look here). Daily they make their own mozzarella and I had to have some of that. Next stop Trader Joe’s – I had planned on making my own dough but was running out of time so picked up 2 dough balls.
So we begin…
I first started by roasting the asparagus and cooking the leeks until golden
Then needed to get the cheese ready
For assembly I spread of thin layer of Alfredo sauce onto the dough, added the veggies and cheese then put into a 450 degree oven for about 14 minutes.
Here is the finished product – it was very tasty!
Next up the red, started by adding some spices to the canned tomatoes
Assembled the pizza and cooked at 500 degrees for about 10 minutes.
Here’s a little trick I do when the tomatoes look watery… I put one or two paper towels over the pizza to absorb some of the liquid (no worries- the tomatoes stay on the pizza). Then top with the cheese
The pizza needs fresh basil when it comes out of the oven
Another tasty pizza and we even have leftovers for the weekend! 4+ stars for both – both are different – both are so good!
Oh – on a side note I was happy that I finally remembered to buy Junior Mints (remember my sweet tooth) for the freezer – it’s been 2 weeks since I’ve had any!! So 2 boxes are twice as nice!
