Ba'Corn Cheese Skillet

How does a side dish sound that has bacon, corn and cheese?  Your taste buds will be tantalized!

Are you a fan of Diners, Drive-Ins and Dives?  Do you have any places in your town that has been featured?  A few weeks ago the family was together and we were watching an episode where they featured this dish from The Bun Shop in Los Angeles.  I think we were all drooling so I knew I had to give it a try.  What's not to like with crispy bacon, charred corn, gooey cheese and a bit of jalapeno for some kick?  It's easy to make and made a great side dish when the DIY Guy made us some smoked ribs.  Do I have your taste bud's attention?

Doesn't this smoothie look so pretty, not to mention that it is so refreshing too?  The colors remind me of spring and I'm sipping on one right now as I'm writing this post.  Not only would this make a great breakfast drink to start your day but it also is a great pick-me-up drink in the afternoons when you need an extra burst of energy to get you through the rest of the day.  I could have mixed the entire smoothie up but I kind of like having the two layers so first you can get all the mango taste and then work on the raspberry layer.  Or if you want move your straw up and down to alternate each flavor.  You can't go wrong anyway you decide.

Time to take the scratch and sniff test - oh wait - you can't now, BUT you can make these rolls and experience that first hand!  My kitchen smelled so good when the rolls came out of the oven with the orange citrus flavor.  Then it was doubly aromatic with the orange glaze that was drizzled over the warm rolls.  Do I have your mouth watering yet?  I hope so!  These turn out so light and fluffy and when combined with the crunchy pecans, you have the perfect breakfast treat or snack.

Easy One Pot Lasagna Soup

If you love lasagna, you will love this soup.  Easy to make, with all that lasagna taste, without all the work made in one pot!

We've all heard it is not nice to fool with Mother Nature, right?  But what about when Mother Nature fools with us?  Oh sure she teased us when it was in the 60s for five-six days, all the snow was gone, had a little extra skip in my step then bam we woke up this morning to ten inches of snow!  What's a girl to do?  Well, that is where this lasagna soup comes in.  We did have a heads up the storm was coming so I ran out last night to get "provisions" as we prepared to hunker down.  That's what us Minnesotans do, even this transplanted one - we wouldn't want to starve :)

Today's recipe was especially made for our granddaughter Emily so I'm dedicating this post to her.
Doesn't it seem like in recent years we hear more about peanut allergies?  When my kids went to school, I think I heard of a couple kids with it and honestly did not pay much attention.  I do have one friend who's son has it and learned a little more but it wasn't in our family.  That changed when Emily had a reaction the first time it was introduced to her and she broke out in hives.  Long story short with visits to the doctor and testing, she has tested positive.  Luckily she has never had any breathing problems and obviously we are very careful with her foods.  She still loves her treats though and I love making them for her so be sure to check out the recipe to see how this was made peanut free.
