We interrupt your healthy eating habits to bring you a little dessert!  But don't worry it is on the lighter calorie side so it would be totally fine if you indulged in one of these tasty treats (plus I would never tell anyone!)  Creme Brulee is one of my go to sweets when we go out to dinner.  We have a couple fantastic restaurants in town that are known for these dinner ending desserts.  While I'm sure theirs are made with a lot more calories, this version didn't seem to skim on texture or flavor.

When I grew up my mom made complete meals for every dinner with some sort of protein, a side dish and veggies. Unless of course if it was pasta night (yum) but even then we had meat from the sauce and a side salad with pasta being the main attraction.  So it is ingrained in my brain to try to have 3 items for each meal.  I have to admit that I sometimes struggle with a side dish.  We would mostly have potatoes whether they would be fried, baked or mashed.  I don't think my dad was one who liked to venture out from that.  As I grew older and realized that we COULD have something else, it was like a new world opened up to me.  I'm always on the lookout for something to compliment the meal and jazz it up a bit!

Breakfast is served today with these 12 pancakes recipes from the #12 blogger 2016 group.  It's our first post of the year and if you are new to this concept, I'll explain what we are all about.  We are 12 bloggers who on the 12th of each month will create a recipe around a theme one of us has selected and then we use 12 ingredients or less!  I really enjoyed being part of the group last year and definitely wanted to continue.  Seeing that it is our first recipe of the year, I'm glad we started with a breakfast pick (the most important meal of the day, right?) Happy Thursday!  Hang in there, the first full week of January is about over and the weekend is coming.  Were you moving kind of slow this week or did you hit the ground running?  I had off about a week from work and was actually looking forward to getting back into a schedule.  Crazy I know but I'm kind of like that! (Though I do miss sleeping in.) While I was off I created this new salad recipe that I'm nicknaming sunshine in a bowl!  What do you think?  Doesn't it just make you smile and want to reach in and grab a forkful?  There are so many good ingredients in this Chopped Spinach Pomegranate Salad including a touch of mango, tangy gorgonozola and a pomegranate vinaigrette.  Are you hooked yet?   I encourage you to start the year off right and eat your veggies!

Salads Galore!

Captain's Chef's log day 1.  Well, it's time!  The new year has begun and if you are like me, you might want to be eating a bit on the lighter side.  Sure the holidays are all fun and games until you go back to work and your slacks fit a bit snugger... ouch!  Yes, I admit, I enjoyed everything the holiday season brought - cookies, appetizers, tasty beverages, dinners, lunches, etc.  You name it and I probably gave it a sampling.  So what's a gal to do now?  I have a plan - I pretty much purged the house this past weekend by cleaning out the pantry, fridge, freezer and even tossed out the last couple of sweets (don't tell the DIY Guy!)  I'm ready to get back on track by taking my lunch to work and preparing dinners with healthier choices.  Are you with me?
