Roasted Golden Beet Salad

Freshness is the name of the game today with this tasty Roasted Golden Beet Salad! With our busy summer I finally had a chance to stop by our local Farmer's Market.  I'm really not an early riser so I usually head over around 10 while the crowd is still going strong but still lots of veggies to choose from.  I love meandering around, taking in all the sights and fresh produce.  I kind of go prepared with a list in my mind and then walk around to scope out for what I'm looking for.  I sometimes stop and buy right away or if I'm not in a hurry, I'll walk the entire market and then go back for my goodies!  It's an experience that I really enjoy and may buy more than what is in my mind :)

Last week was just one of those weeks where I didn't feel like cooking much and couldn't even think of what to make, so one night we ended up going out to dinner.  We could have went to a chain restaurant that would have been quick but instead went to a "fancier" place and was able to sit outside and really enjoy the night.  First up some tasty cocktails - mine was call a Mint Night Summer's Dream and it was fantastic.  Then we just decided to have a few small plates and call it good.  The restaurant is known for serving the freshest foods available and this {copy cat} salad did not disappoint.  Perfectly roasted beets with feta, mint, julienne radishes, fresh cracked pepper and drizzled with a bit of oil olive.

My version is very similar though I found at the Farmer's Market spicy radish sprouts; those really added a zippy tang to the whole dish.  It's best to try and take a bite with a little bit of the added ingredients with the beet - it is a flavor explosion in your mouth.

I was really good on this trip - I only bought the beets, mint and radish sprouts BUT somehow a big bouquet of flowers ended up in market bag too!  I couldn't resist and I don't think you will be able to resist this salad. And if you have extra beets, dice them up in a salad - that's what I did today for lunch - yum!

Roasted Beet Salad

Prep Time: 10 minutes
Cook Time: 50 minutes
Yield 4 servings
  • 2-3 large roasted beets (Golden or Red) see link above to roast beets
  • feta cheese
  • mint leaves
  • olive oil
  • radish sprouts (or julienned radishes)
  • fresh cracked pepper
  1. Slice roasted beets and arrange on plate
  2. Top with feta cheese, mint leaves, sprouts and pepper
  3. Drizzle with olive oil
  4. (adjust amount of ingredients to your liking)
