I'm not sure about you but I have been super busy these last two weeks with getting it all done for the holidays.  Running from here to there, shopping, wrapping, baking and even working (cuz, oh yeah, I still need to do that!)  I've been MIA in the kitchen and haven't had a new post in about ten days and have really missed it.  So today I'm real excited to share this new festive recipe for you just in time for the holidays.

Today's post almost didn't happen.  I made the recipe, I sampled the recipe and then I sampled the recipe again a few more times and that's where it almost ended.  I very quickly got addicted to this tasty snack and probably could have finished it all by myself.  But knowing I had to get a post out, I had to walk away, get out the camera and shoot while resisting the urge to keep eating out of the bowl.  The combination of the white chocolate, peppermint with M&Ms was just perfect.  And since I like to share, I want you to get addicted too :)

Am I the last person to discover how delicious overnight oats are?  Oh sure, I have been seeing them on pinterest and even on other friend's blogs, but have never thought to give them a try.  Well that is all changing since I now have made my first batch and I know it won't be my last.  I think originally I was just skeptical, like how can this work?  Well skeptic no more, in under 10 minutes I had these whipped up, in the refrigerator and did not have to fuss with breakfast the next morning.  They were ready to go and provided a nice healthy way to start my day.  And since I'm usually running late to work, e.v.e.r.y minute counts!

Today's salad makes a perfect side dish for the fall or is great on its own to bring as a lunch.  You'll love the chewy texture of the wild rice and it is loaded with other goodies for your palate pleasure.  Being originally from upstate New York, I never heard of wild rice until I moved to Minnesota where it is a staple in many soups, salads and hot dishes (known as casseroles in NY!).  There is something about the texture that I really like.  It's not mushy, has a nice nutty flavor to it and technically it is a grass so feel free to graze on it all day!

With a couple big holidays coming up curious minds want to know - are you a fan of sweet potatoes?  I am for sure and I like them mashed, baked, roasted, french fried and in gumbo (oh wait that is Bubba shrimp!) 

Kidding aside, I like them anyway they can be prepared.  Love the sweet flavor and if I can resist over dousing them in butter and brown sugar, they are pretty healthy too.  Today I'm sharing how to prepare them as a tasty appetizer.  The rounds are roasted, spread with a creamy goat cheese filling, topped with pecans and craisins and then drizzled with some honey.

Technically in our neck of the woods it's fall, it's also November and it's also supposed to be cold!  Well, someone forget to tell Mother Nature these things since the past few weeks temps have been in the 60's (even 70's last Friday) and this weekend more of the same.

Today's recipe is for the adults and it's true confession time!  Some of you may or may not know this but I'm a cocktail sort of gal.  And with it being fall, I enjoy drinks with fall flavors such as this Apple Pie Cinnamon Cocktail.  Trust me, this really tastes like liquid apple pie and is not too heavy on the alcohol side since half of the drink is made with fresh apple cider.  It's tasty, not too sweet and would be perfect for a fall party or just sipping by the fire.  I'll definitely be serving this next time we  have some friends over.  Any takers?

Trick or treat!  Today I'm sharing these Halloween Candy Bites; not only are they super easy to make but they are also really tasty with chocolate, dates, pepitas and almonds.  The perfect snack for your little goblins that they can even help with.  While I made these myself, I could picture my granddaughter helping decorating this treats.  I can also see her dipping her finger in the chocolate mixture and smiling.  Having fun in the kitchen is where it is at with your little "sous chefs."

Ladies and gents start your griddle as you are in for a real treat today!  We love these Apple Pancakes with Apple Maple Sauce.  They are the fluffiest pancake recipe I have ever tried and the apple topping sauteed in maple syrup is fantastic.  Don't wait for breakfast, have these any time your heart desires.  And in our case they were an afternoon snack.  Yep, you know being a food blogger means you might not be able to make and take pictures for the actual meal and this was one of those time.  Of course my taste tester never turns down the 'goods' even if it is close to dinner time.  Trust me - you, your family and friends will flip over this tasty recipe.

The other day the DIY Guy was walking in the kitchen when he noticed some overripe bananas on the counter (well actually the entire kitchen smelled like bananas - they were that ripe!)  In the past, I maybe would have thrown them in the freezer thinking I would use them some day but this time he asked if I could make something. 
I also happened to have about a full can of pumpkin leftover that I didn't want to go to waste, so I thought why not try to combine the two and make this Easy Pumpkin Banana Nut Quick Bread. 

While this is not an original recipe, I did decide to kick it up a notch with a creamy maple glaze. That, my friends, really put it over the top!
