Banana Bread (Loaded!)

It's a first!  I've never in my life made banana bread.  I like it, I really do but I guess I prefer when others make it for me!  I decided to take the plunge when I had two very ripe bananas sitting in the basket.  I've had black bananas before and have had no guilt tossing them out but this time, they seemed to be calling my name.  P-l-e-a-s-e use us and so I did.  And not only did I use them, but I invited some friends to join in - chocolate, nuts, dried cherries and blueberries.  Now that's a banana bread!

Oatmeal Cookies Red, White & Blue

Oatmeal cookies happen to be one of the DIY Guy's favorite.  Me, well, I'm more of a chocolate chip cookie kind of gal.  But this past weekend was all about the dad's (right!) so I wanted to make him something to enjoy over the weekend.  I've tried different mix-ins before like pecans, coconut and of course chocolate, but these are definitely more on the fruity side with dried cherries, dried blueberries and white chocolate chunks.  A bit on the patriotic side and a lot on flavor!

Moscow Mule Popsicles

Have you heard of a Moscow Mule cocktail?  This drink has been around since 1939 but has recently gained a lot of popularity.  I'm seeing them more on restaurant menus and up until a couple weeks ago, I hadn't had one.  I was really curious since the main mixer is ginger beer (not ale).  The ginger beer has a bit of a kick to it and with the rest of the mixings (lime and vodka), this drink is quite refreshing and perfect for a hot summer day.  Typically they are served in a copper mug that keeps your drink cold from first sip to last.  And making them into a frozen treat can really cool you down!

Lighten up for summer with this cool Jicama Salad with a tasty Asian Vinaigrette.  I'm so in the mood for lighter recipes now that summer has started to arrive.  We tend to grill out a lot and I like simple recipes to compliment the main course.  I'm sure some of you have heard of this vegetable but for those that haven't, Jicama is a crispy, sweet, edible tuber that resembles a turnip in physical appearance, although the plants are not related.  How's that for a definition?  I didn't make that up but it can be found at this link if you want to learn more.  All you really need to know is this is one fantastic recipe!

Your farmer's market can provide some wonderful produce during the summer months.  I love moseying around the vendor stands looking for the season's best fresh ingredients.   One of my favorite ways to enjoy tomatoes is making a caprese salad with fresh mozzarella and basil with a drizzle of olive oil.  These bite sized appetizers are made with the same fresh ingredients but what makes them so special you might ask?  It's making your own pesto!

Well it's June and that means summer is starting to be in full swing.  Maybe time for vacation, kicking back, relaxing, gardening, swimming, grilling, etc.  The list goes on and on.  What are you looking forward to the most?  We are heading out to vacation in about a month with renting a cabin in northern Minnesota.  We've done that for a few years and love the tradition.  Can't wait!  Since we are starting to heat up, be sure to check out my features of frozen treats!

What do you reach for when you want to chill out and have a refreshing drink?  Pop (or soda depending where you live), water, juice?  Well, give yourself 5 minutes to whip up a batch of these cool Raspberry Lemon Yogurt Smoothies.  Up until recently I was a big diet Pepsi kind of gal.  I would have about one a day and more on the weekends.  I felt it gave me the lift I needed but then decided not really, because then I was searching for a salty snack to go along with it.  Oh what a vicious cycle I was in.  Well, that has all changed. I've mostly switched to water but when I feel I need an energy boost, out comes the blender and away we go.....
