How was your weekend?  We had a pretty quiet one with no real plans so I had some time to try some new recipes.  It was just kind of fun to putz around the kitchen and not be on any timeline.  And with summer coming soon,  I've been wanting to come up with some new appetizers.  A perfect night to me is a warm summer night on the deck, with family or friends, enjoying some tasty beverages and a few appetizers.  I have my old standby recipes but could always use some new ones to keep our guests happy (and full!)

Best of the Weekend and On the Menu

TGIF!  I'm sitting here writing my post and watching it rain.  We need the rain and as the saying goes "April showers bring May flowers" and I'm so ready for that.  The DIY Guy has been doing some work outside getting the flower beds ready and some of our perennials have been popping up but I have some sad news.... For the last several years (I can't remember how long) we've had 10 goldfish in our pond.  We winter them over in the house in a 50 gallon aquarium and they have grown to be about 8-9" long.  This year after we put them outside, the pond had a high ammonium spike and they all died.  John is really careful with acclimating them back outside and watching for that but it just happened.... darn.  Instead we'll be filling the pond with water plants which will be less maintenance in the long run!

We've been eating a lot lately - there I'm just putting it out there!  So now you know! With just getting back from vacation, visits from the kids, a retirement party, charity fundraiser and just NOT wanting to watch it, oh boy it is time to get back on track.  This past weekend I stocked up on fresh veggies, fruits, lean meats and whole grains.  Hence this tasty quinoa creation with an Italian flair!

Best of the Weekend and Giveaway!

Wow - what a week!  It's been busy on the home/work front and I'm looking forward to some time to unwind.  The highlight of the week so far has been a visit from our kids and granddaughter.  I've had a blast today playing outside - we colored with chalk on the sidewalk, did some swinging and just walking around enjoying the wonderful weather.  Work brought a retreat and I was busy with the preparations and coordination... so now it is time to kick back and relax!

As you are trying to eat up your leftover ham, your leftover corn flakes from that cheesy potato casserole you made for Easter are feeling left out!  It's always all about the leftover ham after a holiday. And while there are many recipes for that - what about the corn flakes?  When I made our cheesy potatoes this past Sunday, I was looking for a way to use up the box.  Sorry, but plain corn flakes with milk just doesn't appeal to me!  But this crispy french toast was a sure winner.

How does a tasty salad sound to go with this spring weather?  I'm guessing pretty good.  I'm so craving some lighter and healthier foods.  This salad has it all, fresh greens, strawberries, gorgonzola cheese, pecans and even a bit of fennel all drizzled with a freshly made orange vinaigrette.  It is so good and your taste buds will thank you!
