TGIF friends! Are you glad the weekend is here?  What do you have going on?  With Easter just a week away, I need to starting thinking about what to make.  We'll be going to our daughter's and looking forward to spending time with our family.  Are you a traditional ham person?   What about side dishes?  Our family loves those cheesy potatoes with the crushed corn flakes so those are definitely on the menu.  And I doubt there will be any leftovers!

Do you have a favorite kitchen appliance?  Do you keep it out so you see it and use it?   I love my ice cream maker but sadly I don't use it enough.  But I'm about to change that by experimenting with some new recipes this year.  I bought a Cuisinart a couple years ago just because I thought I needed one and up until now, well, I've made about 3 ice cream recipes (and all vanilla!)   Today is number 4 and it tastes fantastic - a carrot cake in an ice cream form.

Best of the Weekend - Spring!

Happy first day of spring!  It was a beautiful day here with 50 degrees and sun.  It's great to see the snow gone and the grass again.  And how was your week?  I spent 4 days on a business trip to Phoenix where I experienced temps between 80-90 during the day.  I loved it!  Cacti and trees were in bloom.  I also was able to catch up with a good friend who used to be my back door neighbor. Even though it's been 15 years since she moved, it's sure doesn't seem like it when we get together - we take up where we left off!

Spring has been coming to the midwest slowly and surely this week - we've had temps in the 50's and 60's and it feels wonderful!  I have one little mound of snow in the front yard that should be melted today - yippee!  I can't complain too much as winter wasn't as horrible as last year.  We did some some grilling out this week and looking forward to even more of that.

Best of the Weekend and St. Patrick's Day!

Welcome to our first party of March!  Around these parts it came in as a lion - cold and with a bit of snow on Tuesday BUT by next week they are predicting 40-50's - can't wait!!  I hope it was better for you.  And speaking of coming in as a lion and out like a lamb, I loved when my girls in grade school would make Lions and Lambs on popsicles sticks.  Just a fond memory and I miss those art and craft days.  I guess I can look forward to our granddaughter's artwork in the future!

If you are of Welsh heritage, you might have tried Welsh Cakes or at least heard of them.  My dad is part Welsh and I've had them before but have never made them.  As luck would have it, our friend is and after being out to dinner with them recently, we headed back to their place for dessert.  Dave had just made a batch, of which I had a few, and then they were kind enough to send some home with me.  Of course I had to take some photos and even better, he shared his recipe with me!
