Summer is still in full swing but soon (and probably sooner for some!) it will be time to send off the kiddos to school.  Whether it be from pre-school to college, I'm sure this cool cash will come in handy!  Being an empty nester, I'm out of the school scene but I definitely remember taking my girls out shopping for new clothes and their supplies.  And if I am dating myself (a bit), my biggest thrill was selecting my new lunch box - I'm sure some of you remember some of these - Batman, Beatles, The Munsters, Peanuts, Flipper and Family Affair to name a few!

Whew, the weekend is over!  It was busy, busy as I mentioned a couple days ago I was helping a friend with her daughter's wedding at their house.  It was a beautiful affair - from the weather to the event.  Everything went off without a hitch!  In addition to being a wedding helper, I also made cookies.  What could be better for an outdoor wedding but a plate full of 'fresh flowers.'

Let's do the salsa but put a twist on it with this Peach Salsa recipe today!  Peaches are one of my favorite fruits - I just love biting into the skin and having the taste burst in my mouth.  If the juice runs down my arm then so be it!  Finding peaches now is pretty easy to do and I buy them by the crate at my local Trader Joe's.

You've Got Mail!

Today's post is just a little housecleaning that I wanted you to be aware of.  Nothing scary or crazy I promise!  But just giving you a heads up. If you subscribe to my blog posts via email (you might be reading this there now), every time I have a new post, you receive an email around 7 PM CST.  I am currently using Feed Burner to manage these subscriptions but will be moving soon to Mail Chimp.  The major reason for the change, is that I understand it better, can customize and I think it looks a lot nicer than what I am currently doing!

No need to re-sign up - that is if I can do it correctly :)  I have faith that I will! Oh and I'll remember to disconnect feed burner so you don't get 2 emails - that would be annoying!

Another feature that I like is if you want to respond to the email with the post, just hit reply and I directly get an email... pretty nice!

If you aren't getting posts by mail and would like to, there is a sign-up box near the top right hand side of my side bar -will you be asked for your email but that NEVER gets shared with anyone and is confidential to me only (you always have the ability to unsubscribe too).  I'm currently doing 2-3 new recipes a week and our Friday night Best of the Weekend Party.

Well this week certainly went by fast.... just seems like it was July 4th and now it's the 11th!  Everyone in my office was back to work and it just got busy busy!  But I would rather have that than no work to do...  On the personal side, this is about the only free weekend we have until the end of summer.  Next weekend I'm helping a friend who is having her daughter's wedding at HER house!  I'll be making several dozen cookies to help out and then being one of her right-hand women the day of the wedding.  So I need to get baking now!

Today's recipe - Orange Creamsicle Mini Shakes was not my original intent.  These were suppose to be made into popsicles...  And of course there is a story to go along with it - I was super excited to try my popsicle molds again and make one of my favorite childhood summer treats BUT I wanted to give it a little punch with adding some alcohol.  I thought if I added just a little bit that I would not have a problem.  So I put the ingredients in the blender, mixed it up and poured into my molds.  Well, just then the DIY Guy walked by and said "those won't freeze good".  I said "of course they will!"  So I patiently waited....

We love our cookies around here - well I like to bake and the DIY Guys likes to eat them (though I'm known to eat a couple!)  So today you can thank him for these Chocolate Chunk Toasted Coconut and Pecan Cookies.  We've he has been a kick lately to use up what's in our pantry, freezer and refrigerator.  I tend to forget what I have and buy more of the same things.  I really need a better system of keeping track... if you have one, let me know!  So one day he finds a bag of opened flaked coconut - it's kind of on its last leg.  By itself it wouldn't be great but toasted - hmmmm, yes, that was the solution!

Welcome to Best of the Weekend and Happy 4th of July!  I can't believe it is July... I love summer and hope it doesn't go by too quickly!  We are ending this week with our yearly cabin trip up north in Minnesota.  We've had a great week of R&R, boating, fishing, eating and enjoying some tasty beverages.  Besides the DIY Guy, we are also joined by our daughter, her husband and our cutie granddaughter Miss Emily.  At ten months, she has been so fun to be around!  I hope you are enjoying your summer as well!

In our family starting mid-June to mid-September we all have a birthday.  In fact, the DIY Guy and mine are 2 days apart - we are both Leos - is that a problem :)  Well, after 31 years I'm guessing not!
