Summer 2013

It's officially summer and we just got back from a week at a cabin in northern Minnesota.  We really lucked out and had great weather all week - we fished, swam, relaxed, ate, consumed tasty beverages, played some games and had quality family time.

Speaking of eats, we grilled out about every night and the 2 dinners that I think I can say we all enjoyed the most were:

Steak Tacos Avocado Salsa | Cooking on the Front Burner

These were prepared by Kristina and her husband and they were delicious!  It was a first for me having steak type tacos and I would definitely make these again (once I can get the recipe, I will share with you as well!).  We also had grilled corn that later was rubbed in some yummy Mexican spices.

This meal also went well with a tasty beverage.

The second dinner that has become a tradition for us are grilled pizzas.  Everything including the dough is cooked on the grill.... I first grill up the sausage, peppers and onions on skewers.

The dough (this time I used Trader Joe's for easy prep) is cooked on the grill until it gets nice and brown.

It gets flipped and seared for about 30 seconds.  Then it is removed and the toppings are added.

We used the above plus 3 types of cheeses - feta, mozzarella and parmesan - some sliced green onions and fresh diced tomatoes.  The finishing touch is a drizzle of Italian dressing.  Slide the pizza back on the grill to finish cooking and slightly charring the bottom (I used a pizza peel for the sliding).

Today I am guest posting at Frugal Foodie Mama with this post......

...Hi, I'm Deb from Cooking On the Front Burner and excited today to be guest posting at Carrie's as part of her Virtual Ice Cream party week!  I've known Carrie for awhile now and her blog is a great place to come for some wonderful recipes, Marvelous Monday and of course, my favorite, the SPIKED! Challenge.  In fact, I can't wait to see what the ingredient will be for July.... (and I was thrilled when my Strawberry Margarita Shortcake was selected as a top pick last month).

Now that summer is officially here, one of our favorite things to do is go out for a scoop or two.  I'm not picky - I like Dairy Queen, Culvers, Cold Stone, Flapdoodles (local) or even an occasional cone from Mickey D's!

But now..... I own this!

Yep, I decided to take the plunge.  I've seen so many good ice cream recipes from pinterest that I know I want to try so I thought, why not!  Last Saturday I drove to Kohl's (with my coupon), picked this up, came home and tried to sneak it in the house.  No luck, I was met at the garage door by the DIY Guy.  He took one look and said "I suppose that is for something you are blogging about?" and I said "Yes" then he said "Well, I get to eat the goods so I don't mind"....  whew!  It all worked out

Since this was the first time I was using it, I decided on plain vanilla to play it safe!  I was very pleased with the results and now thinking of other flavors to try next.  I do love sprinkles so I think that jazzed it up a bit... do you?

Do you have a favorite dessert?  Something that hits the spot?  I'm in the mood for something sweet and salty and the above dessert comes to mind.  I originally made this dessert about a year ago on our cabin vacation trip.  I love the crunchy salty crust, creamy filling and fruity topping; it is a perfect combination!  There are many different versions on the web and this one was really good and easy to do.  Though why is it called a salad?  Enlighten me!

We are heading "up north" shortly to another cabin rental and I'm thinking this is going on my menu again.  I'm looking forward to hanging with the loons, fishing and watching the sunset.  And also loading up some books on my Kindle and relaxing. (Pictures from last year.)

Shrimp Tacos with Spicy Coleslaw

Today I'm sharing what was to be our Father's Day dinner. As mentioned in this post we were kinda full from our lunch so we passed on dinner and ended up going to our friends for drinks and dessert.  Since I had all the ingredients, this was our Monday night dinner.  By then we were definitely ready and craving these.

Do you like shrimp or fish tacos?  I'm really trying to come up with the best Shrimp Taco recipe and I think this one is pretty close!  The kicker is the spicy coleslaw which can be served also as a side dish.... so I'm thinking I may be making this a few more times this summer. 

The shrimp is easy to prepare - just sprinkle some chili powder and grill them on a small grate.  They will be done in about 5 minutes.  Warm up some tortillas, add the slaw, shrimp and we also added some grated monterey jack cheese and a cilantro sour cream sauce.

Shrimp Tacos with Spicy Coleslaw

Prep Time: 25 minutes
Cook Time: 10 minutes

Ingredients (6 servings)
  • 1 lb shrimp, deveined and cleaned
  • Chili powder
  • 1 to 2 T minced jalapeno
  • 3 cups shredded cabbage blend
  • 3/4 cup corn (frozen, thawed)
  • 2 T minced red onion
  • 1/2 cup minced red pepper
  • 1 T minced cilantro
  • 1/3 cup canola oil
  • 2 T cider vinegar
  • 1 T sugar
  • 1 tsp cayenne pepper
  • 1/2 tsp cumin
  • S&P
  • flour tortillas
  • monterey jack cheese
  • (mix and refrigerate 20 minutes):
  • 3/4 cup sour cream
  • 2T minced cilantro
  • 3 T fresh lime juice
  • 1/2 tsp cumin
  • S&P
1. In a large bowl combine cabbage, corn, onion, jalapeno, red pepper and cilantro
2. Combine oil, vinegar, sugar, cayenne pepper, cumin, and S&P then pour over mixture and refrigerate for 30-45 minutes
3. Heat grill with small grate. Sprinkle shrimp with some chili powder and grill until done.
4. To serve, warm tortillas, add cabbage slaw, shrimp and top with sauce and shredded cheese if desired

Happy Father's Day

Today we had an enjoyable Father's Day... The weather was fantastic, both the girls called their dad since they were unable to be here and I had planned some foodie things.  The DIY Guy really enjoys going to our local BBQ place (called John Hardy's) so that was our lunch stop where we enjoyed sitting outside with some good eats and tasty beverages.  Normally we both order the same thing and the lingo is small pork plate, medium sauce with jo-jo's and coleslaw.  But today John ordered some ribs and I went with the usual.....  so yummy!  Quite filling too.

I had planned to make shrimp tacos for dinner but this meal really filled us up (now moved to Monday dinner!).  So we were content but then mid-afternoon we had a call from some friends to come over for drinks and dessert.... that sounded just right.

Dave always comes up with some fun drinks and we were greeted with this....

MJ made a light snack to munch on while we sat outside to enjoy the wonderful summer weather - it was a beautiful night.

I offered to bring dessert.  This is similar to the dessert we had at book club a few days ago... I added some strawberries and used Whipped Cream Vodka instead of the Tequila in the cream.  This is such a light and easy dessert to make.

The DIY Guy enjoyed his day and tomorrow he will get his shrimp tacos!

You say it's your birthday - Happy Birthday to ya! Today is a very special day as we celebrate Meghan's birthday from The Tasty Fork!  I met Meghan through one of the giveaways I recently participated in and she had asked some of us if we wanted to "make" her a special treat to celebrate.  I was happy to oblige and decided to make her a fun, patriotic* and easy dessert!

Patriotic Berry Tart

Prep Time: 10 minutes
Bake Time: 22 minutes

Ingredients (12 servings)
  • 1 sheet puffed pastry dough, thawed
  • 1 egg beaten
  • sugar
  • 8 oz mascarpone cheese
  • 1/3 cup heavy cream
  • 1/4 confectionery sugar
  • 1 lemon zested
  • assorted berries
  • 1/3 cup apple jelly
  • 1 T light corn syrup
1. Preheat oven to 375.
2. Roll dough on a floured surface to a 10x12” rectangle then place on parchment paper on a cookie sheet. Lightly score with a sharp knife 1” around the edge of the dough; brush edge with egg and then sprinkle with sugar
3. Bake until golden brown about 18-22 minutes. (center will puff up)
4. Remove from oven and lightly score the edge again making sure not to cut through bottom of dough
5. Press down the center with a big spatula or an oven mitt – let cool completely
6. In a medium bowl beat the mascarpone cheese, heavy cream, confectionery sugar and lemon zest.
7. Spread carefully onto cooled crust the place berries in whatever pattern you would like…
8. In a small bowl combine the apple jelly and corn syrup – heat in microwave until it is smooth but not very hot
9. Brush on fruit
10. Cut and serve

Book Club Night

Last week was book club night at our friend Claudia's.  We were also celebrating a special birthday of the group - but I won't name names or age!  (I don't want payback and I was cracking a few old jokes that could come back to haunt me!)

We had some gag gifts and can you guess what was in the bag?

A few fun sayings were also at each place setting...

Once the fun and games were over, we DID talk a bit about the book which was Fly Away by Kristin Hannah.  I love her books and this was my pick.  A few years ago we read the prequel Fire Fly Lane.  That was the very first book I had ever read of hers and I was hooked!  I think I have read every book she has written (and even Fire Fly Lane again for a second time right before this read).  I'm not one to divulge much about the book in case you would like to read it and don't want to spoil it.... but I do highly recommend it (both in fact).

We heard it was a good read and funny... we will see!

Baby Shower Time...

This past Sunday one of Kristina's BFF hosted a baby shower... It was a wonderful time and she received some beautiful gifts for the upcoming arrival in about 9 weeks!  Just sharing a few pictures with you including what the DIY Guy made to help me out! 

Isn't it cute!  We had originally thought a cantaloupe for the head but it was too big - the orange was just right!
