Lemon Blueberry Bread

It's berry season!  YAY!  What's your favorite?  I love all berries and pretty much buy them all year long.  I add them to cereal, snack and also do some baking.  They are - get ready for it - berrylicious (couldn't help myself!)  What would make this even better? Adding my love of lemons. This bread is lemony, though just right- not only is it in the batter but a syrup glaze is drizzled down through poked holes.  Great combination of flavors.

The occasion for the treat was a birthday celebration at work and Grace loves lemons as much as I do.  We had a little coffee hour at work with some co-workers, sat around and visited for a bit.



Lemon Blueberry Bread

Prep Time: 15 minutes
Bake Time: 1 hour

Ingredients (12 slices)
    Bread
    • 2 eggs
    • 1 cup sugar
    • 3 T lemon juice, fresh
    • 1/3 cup butter melted
    • 1 ½ cups blueberries
    • 2 T lemon zest
    • 1 ½ cup flour
    • 1 ½ t baking powder
    • 1 t salt
    • 1/2 cup whole milk
    Syrup
    • 3 T lemon juice, fresh
    • 3 T sugar
    Glaze
    • 3/4 cup powdered sugar
    • 2 T whole milk
    Instructions
    1. Lightly spray a 8x5 loaf pan – spray with PAM and then line with parchment paper – having extra paper on the sides (to lift out of the pan later)
    2. Mix the eggs, sugar, lemon juice, and butter
    3. In a separate bowl sift the flour, baking powder and salt
    4. Add the dry ingredients and the milk (alternating about 1/3 each time) to the egg mixture
    5. To keep the blueberries from sinking, toss first in about 1 ½ t of flour.
    6. Gently add blueberries and lemon zest to batter. Pour in loaf pan and bake about 55 minutes or until toothpick comes out clean. Top should look golden
    7. While the bread is baking, combine the syrup ingredients in a small pan and bring to a boil – continue cooking for about 2 minutes until thickened
    8. When loaf comes out of oven poke some holes and drizzle syrup on top
    9. When completely cool, use parchment paper to take loaf out of pan.
    10. Make glaze by combining the 2 ingredients and drizzle over top

    I sent the  leftovers home for her family (and a slice for the DIY Guy as well).  Everyone enjoyed it!  Pucker Up!
