Luscious Lemon Bars


Today I was going through my 'vault' and came across this Lemon Bar recipe that I hadn't yet shared with you.  I originally made these for my husband's co-worker this past summer.  She had made a request for some lemon bars and since she was done with her temporary assignment in the company, I was happy to give her a nice send-off.

Oh my gosh you will pucker up and love these luscious lemon bars!

Happy Sunday!  Have you made your list and checked it twice?  We are into the home stretch for the holidays and I'm slowly getting what I need to have done.  I have all the gifts wrapped and have started on some food.  Today I made my sauce for the raviolis and made the ravioli meat - tomorrow will be making the pasta and stuffing them!  I also need to make some cookies because the first batches of some are gone.  What do you have left to do??

Link Party - Marvelous Monday #77

Welcome - how was your weekend? I went shopping Friday and Saturday, wrapped gifts, and we finally managed to see Catching Fire which I loved!  I also just need to purchase a couple more gifts and I'll be done shopping.  Next weekend will be dedicated to food.  One of our Italian traditions is having homemade raviolis on Christmas - we make the meat kind that has beef, pork and spinach.  These are a family favorite and since I only make them once a year, they are highly anticipated.  What food traditions do you have?  I would to hear about them - please leave me a comment.  Also, in case you didn't notice, I have an updated blog design - still need a few more tweaks but I love it!  I'll be posting about it soon!

Triple Ginger Cookies

Today is an exciting day!   A special thanks to Lindsay and Julie for organizing their 3rd annual Cookie Swap.  By signing up, I donated money to a great cause called Cookies for Kids Cancer  and I was required to bake 3 dozen cookies and send a dozen to 3 bloggers and in return I received 1 dozen cookies from 3 other bloggers.  Of course, the main event is raising money for this important cause - hundreds of bakers signed up and almost $14,000 was raised (this included corporate matches from OXO, Grandma's Molasses, Dixie Crystal Sugar and Gold Medal Flour).

Baby it's winter outside!  I'm sitting here in my kitchen watching it snow and glad I'm inside now.  We just got back from visiting our granddaughter who we babysat last night... she is such a cutie at 3 months - getting so smiley now and developing a little personality.  The Twin Cities definitely has more snow than us but both places it has been soooo cold!  Highs of single digits and lows in the minuses (is that a word?).  Winter is here and I guess I better deal with it!

Happy Friday!  I've been a bit MIA this week.  The last couple of days I've been off from work getting the house decorated and trying to get organized for the holidays. Making lists (and checking them twice!) for what needs to be done, baked, made, shopped for and decorated.... whew!  I'm making progress and today I've off shopping in the Twins Cities with a friend for our annual shopping excursion.

DIY Christmas Containers

Today I'm recycling a post from about a year ago because I'm getting ready to make these containers again.   Last year I had fun doing something crafty and they looked really nice and easy to do.  I've been spending the last 2 days getting the house all decorated for Christmas.  The only thing left are these containers and decorating our tree so by the weekend we should be all set!

Orange Sweet Rolls

Happy first day of December!  Time is a flying!  Now that Thanksgiving is over, do you move onto decorating for Christmas?  I think today we plan on getting our tree and throughout the week decorate it and also put up the house decorations.  By the end of the week, we should be all set - I love a festive house!

One thing I've always wanted to try making have been cinnamon rolls but they seemed intimidating to me.  I thought if I could learn how, they would be a nice treat for Christmas morning.  In going through my cookbooks, I found this recipe in the Debbie Macombers's Christmas Cookbook that had great step-by-step directions.

Orange Sweet Rolls

Prep Time: 15 minutes plus rising time
Bake Time: 35 minutes
Yields 12 rolls

Ingredients
    Dough
    • 1 package dry yeast
    • 3/4 cup whole milk warmed
    • 1 stick butter at room temperature
    • 1/4 cup sugar
    • 2 tsp vanilla
    • 4 1/4 cup flour
    • 1/2 tsp salt
    • 1/2 tsp ground cinnamon
    • 1 tbl orange zest
    • 2 eggs at room temperature
    Filling
    • 1 cup brown sugar
    • 1 tbl cinnamon
    • 1/2 stick butter at room temperature
    Glaze
    • 4 ozs cream cheese at room temperature
    • 2 tbl orange juice
    • 1 cup powdered sugar
    Instructions
    1. For dough - In a large mixing bowl stir the yeast and warm milk together and let sit for 2 minutes. With beaters on low add butter, sugar, vanilla and 1 cup flour, stir until just combined. Add cinnamon, salt, and orange zest. Add eggs and remaining flour; beat until a sticky dough forms.
    2. Switch to a dough hook of mixer and beat for 5 minutes or until dough is smooth and elastic. If you do not have a dough hook; knead on a lightly floured surface for 5 minutes.
    3. Butter sides and bottom of a large bowl; add dough; turn to cover with butter and cover bowl with plastic wrap. Place in a warm spot and let rise one hour or until dough is almost doubled.
    4. Butter a 9x13 baking dish. Turn dough onto a lightly floured surface and roll into a 10x15 rectangle. Brush on soft butter then distribute the brown sugar evenly on dough and sprinkle on the cinnamon. On a long end, roll up tightly and cut into 12 equal pieces. Place dough in dish and cover with plastic wrap. Let rise again for one hour.
    5. Preheat oven to 350; remove wrap and bake for 30-35 minutes until light brown.
    6. Glaze- combine softened cream cheese, orange juice and powdered sugar until fluffy. Spread glaze over warm rolls.

    Happy Day after Thanksgiving and Happy Black Friday!  I'm not a black Friday shopper, I just cherish my sleep more than getting a deal!  Though back in the day - well maybe 15 years ago - black Friday meant the stores opened at 6 a.m. - now that was reasonable and sometimes the stores gave out little trinkets.  Now you barely have time to eat your turkey and the stores are opening.  Geez, let the workers enjoy the holiday with their families...  Ok, enough about what I think!

    Today I am contributing on the The Best Blog Recipes.  My normal day was last week but life got busy so here I am today (thanks for letting me switch!)  I recently found this recipe in my newest Cooking Light magazine and of course I wanted to tweak it - so be sure to head over to see Shauna for the complete recipe:


    And.... we are still using apples from our tree.  I think their shelve life is about gone so next up I will be making apple sauce.  Our tree produced really well this year!

    Pumpkin Cheesecakes with Gingersnap Crust

     Happy day before Thanksgiving!  Today I'm sharing my latest post from two weeks ago at White Lights on Wednesday.  I really had fun making these mini cheesecakes.  Just the right size and the gingersnap crust was a nice change from graham crackers.

    Here's my original post:

    Happy November WLOW readers!  Before you know it Thanksgiving will be here and perhaps you are looking for a pumpkin dessert but not necessarily a pie.  Today I have for you Mini Pumpkin Cheesecakes with Gingersnap Crust.  I'm a huge fan of mini desserts because then you can try more than one!   I could not believe how easy these were.

    Mini Pumpkin Cheesecakes

    Prep Time: 10 minutes
    Bake Time: 14 minutes
    Makes 12 mini cheesecakes
    Ingredients:
      Crust
      • 1 cup gingersnap cookies processed into crumbs
      • 2 tablespoons butter, melted
      • 2 tablespoons brown sugar
      • 1 tablespoon maple syrup
      • 1/4 tsp cinnamon
      • 1/8 teaspoon nutmeg
      Filling
      • 8oz cream cheese, softened
      • 1/4 cup packed brown sugar
      • 1/2 cup canned pumpkin
      • 1 egg plus one egg white
      • 2 tablespoons maple syrup
      • 1/4 tsp cinnamon
      • 1/8 tsp nutmeg
      • 1/8 tsp ginger
      • pinch of cloves
      • Whipped cream or cool whip for topping
      Instructions

      1. Preheat oven to 375 and lightly grease a mini muffin pan that has removable bottoms.
      2. In a bowl combine the crust ingredients; mixing well. Divide the mixture among the 12 cups. Firmly press on bottom and 1/3 up on the side.
      3. In a mixer, combine all the filling ingredients and mix well. Divide among the cups.
      4. Bake for 14 minutes then cool on rack for 20 minutes. Remove and refrigerate until well chilled.
      5. Serve with either whipped cream or cool whip and dust with cinnamon.

      Luckily I had a mini cheesecake pan - it was a gift so I'm not sure where it came from.

      Beef Barley Winter Soup

      Brrrrr...it's cold outside! This past week we have had some snow and a lot colder temps!  When I get home from work, I don't want to go out of the house again and it's only November.  Even colder temps are ahead of us.... why don't I live in FL?  Well, then I would probably complain about the heat :) 

      But I do have a cure to warm you up.  This is categorized a soup but I always end up putting more ingredients in and it turns out more stew-like.  I love the veggies and barley; it makes for a great combination.

      Beef Barley Winter Soup

      Prep Time: 15 minutes
      Cook Time: 50 minutes
      Serves 8-10
      Ingredients
      • 2 lbs. beef stew meat; 1” cubes
      • 1 Tbl olive oil
      • 6 cups water
      • 2 cups beef broth
      • 2 cups chopped celery
      • 1 cup chopped carrots
      • 1 shallot diced
      • 1 (15 oz.) can diced tomatoes (juice too)
      • 3 Tbl tomato paste
      • 1 cube beef bouillion
      • 2 tsp dried oregano
      • 1 tsp dried thyme
      • 2 tsp dried basil
      • 2 tsp dried parsley
      • ½ tsp salt
      • ¼ tsp pepper
      • 4 ounces red wine
      • 1 cup quick-cooking barley
      Instructions
      1. In dutch oven or soup pot, brown meat in oil and cook until most liquid evaporates on medium-high heat (about 15 minutes); add shallot about 5 minutes before
      2. Add water, broth, celery, carrots, tomatoes, tomato paste, bouillon, seasonings and wine.
      3. Bring to boil, reduce heat, cover and simmer for 35 minutes.
      4. Stir in barley and simmer an additional 15 minutes

      I know some of you aren't fans of mushrooms so I didn't list them in the recipe, but if you wanted to add, cook along with the shallots - my shroom of choice is the baby bella.  I love how it holds up in soups and stews.
