Shrimp Florentine Pasta

Here's a colorful dish that is quick, healthy and delicious!  It also has some of my favorites - shrimp, pasta and a tad of lemon juice.  I tweaked the recipe by adding the cherry tomatoes - we currently have an abundance of them and I'm looking for ways to use them up.  Use your favorite pasta too  - I chose fusilli because I like how the sauce sticks inside the curly-cues!

Shrimp Florentine Pasta Serves: 4 Calories: 402 Prep Time to Table: Under 30 minutes

-8 oz. pasta ( your favorite)
-2 T butter
- 1 cup cherry tomatoes halved
-1 lb large cleaned shrimp
-1 tsp minced fresh garlic
-1 tsp crushed red pepper
-1 Tbl fresh lemon juice
-1/2 tsp salt
-1/2 fresh pepper
-6 oz baby spinach

1. Cook pasta and keep warm
2. Melt butter in large skillet; add shrimp, cherry tomatoes, garlic and crushed red pepper and cook about 4 minutes or until shrimp is done. Add cooked pasta, lemon juice, S&P and spinach. Cook for 3 minutes or until spinach starts to wilt.
3. Serve immediately
