Almond Joy Bites

Almond Joy Bites
Sometimes you just feel like a nut - and when you do, you could make these cute mini cupcakes!  I love the combo flavor of chocolate and coconut...just really hits the spot for me.   I had a craving for them for about a week but no recipe of my own so I did some googling and looked at pinterest.  I found a few recipes - picked and tweaked and came up with this creation.

And since they are mini - you could eat 2 or 3!  What the heck they are mini and mini calories, right :-)
