Chicken with Apricots and Orzo

Ooops - I did it again.... as in buying one of those Better Home and Gardens Special Interest Publications - this one is called 30 Minute Dinners - just perfect for quick and delicious meals. I love these magazines and really like that almost every recipe shows a picture of the finished dish..  It's nice seeing the end result before making it, just to see how close I get!

I'll be preparing more recipes in the coming weeks - saw some good ones to try.

Apricots, Chicken and Orzo Serves: 4 Calories: 514 Prep Time to Table: 20 minutes
Recipe : BHG 30 minute Meals

 Ingredients:
 -8 oz orzo, cooked al dente
-15 oz can of apricot halves in light syrup
-4 small boneless chicken breasts
-1 ½ tsp curry powder
-2 T olive oil
-1/4 tsp onion powder
-1 to 2 T dried parsley

Preparation:
1. Drain apricots and reserve ½ cup syrup
2. Sprinkle chicken with S&P and ½ tsp of curry powder
3. Heat oil over medium heat; add chicken and cook about 10 minutes turning once. Last 2 minutes add apricots cut side down; remove chicken and apricots and keep warm
4. Add 1 tsp curry powder, onion powder and parsley to skillet and cook and stir about 30 seconds; add syrup and orzo and cook until heated through
