Happy Cinco de Mayo

Last weekend we were invited to our daughter and her husband's place for dinner.  They did a Mexican themed night and I offered to bring something that would fit in.  I came across this recipe in an Ortega pamphlet and did a little doctoring up.  It was super easy and came together in under 30 minutes.  It might be a dish you want to try tomorrow if you are into the whole Cinco de Mayo celebration!

We also had some enchiladas and a tasty beverage.  I loved our pre-Cinco de Mayo celebration especially because we were able to spend time with our girls and their guys!

Firecracker Tortilla Soup Serves: 6 Calories: na Prep Time to Table: 30 minutes
Recipe : Adapted from Ortega

-2 T olive oil
-1/2 cup diced onion
-1 clove minced garlic
-1 t cumin
-4 oz. diced green chilies
-1 package Ortega chipotle taco seasoning
 -1 cup chunky salsa
-6 cups chicken broth
-12 yellow corn taco shells crushed
-sour cream for topping, crushed tortilla chips and/or grated cheese

1. Heat oil in large pot over medium heat. Add onions, garlic and cumin and saute until onion are soft (about 5 minutes)
2. Add taco seasoning, salsa, and chicken broth – bring to boil; reduce heat and add taco shells and cook 15 minutes.
3. Use either an immersion blender or blend in blender in small batches – return to pot to heat through again
