Chicken Chili

Have you ever made a white chili?  This was the first time for me.... with 42 MPH winds today - it was a good idea to stay in and not try to grill out.  We enjoyed the flavor but thought it needed to be kicked up a notch with more spices so in the recipe I'm posting, I already doubled the cumin, jalapeno and green chiles.

The ingredients

Sorry the picture doesn't do it justice... white on white was not a good choice! (hmmm... good excuse to buy more dishes!)

Chicken-Corn Chili Serves: 4 Calories: 575 Prep Time to Table: 45 minutes
Recipe : adapted from Food Network

 -1 T olive oil
-1/2 cup chopped onion
-2 garlic cloves minced
-1 large jalapeno pepper minced
-8 oz can green chilies diced and drained
 -2 tsp cumin
-2 cups chicken broth
-2 cups shredded cooked chicken
-2 15 oz cans white kidney beans
-2 cups frozen corn thawed
-1/4 to ½ cup chopped fresh cilantro
-1 cup shredded Monterey jack cheese

1. Heat oil in large pot over medium high heat and sauté onions for 3 minutes. Add garlic, jalapeno, green chiles and cumin and sauté for 2 minutes
2. Add chicken broth, 2 cans of drained beans and chicken – bring to boil; reduce heat and simmer about 15 minutes
3. Add corn, cilantro and ½ cup cheese
4. Serve and top with remaining cheese



  1. Mr. D and I love white chili. I have a few different recipes for it...and kind of combine several of them.

    Definitely need new dishes! I'm thinking about getting some Fiesta dishes....

    2. Every time I think I have a favorite color .. I change my mind next time I look at the dishes! I will probably get a mix of the colors.
