Chicken and Pasta in Peanut Sauce

This dish was soooo easy and fast - perfect for a night when you don't have a lot of time but want a lot of flavor! Only 5 ingredients and 20 minutes... and a fun veggie called broccolini -say it slow and let it roll off your tongue.  Sounds exotic!

The ingredients:

Veggies... and the easy part it is cooked with the pasta the last 2 minutes!

Chicken and Pasta in Peanut Sauce Serves: 4 Calories: 467 Prep Time to Table: 20 minutes
Recipe : BH&G Chicken Dinner

-8 ozs. Thin spaghetti
-1 bunch broccolini cut in 2” pieces
-1 red pepper cut into thin strips
-1 lb boneless chicken – sliced in half horizontally
-1 T olive oil
-1/c up peanut sauce

1. Cook spaghetti during last 2 minutes add broccolini and peppers; drain and return to pan
2. Sprinkle chicken with S&P and cook in pan with the 1T of olive oil that has been heated. Cook about 4 minutes on each side or until done. Slice into strips and add to pasta; toss with peanut sauce
