Soup's On - Spicy Mexican Style

Spicy Mexican Soup
This week I had a craving for some soup - something brothy, not creamy, a little spice, some veggies and low-cal.  Spicy Mexican Soup, was a breeze to make and on the table in no time - perfect after a long work day, you are hungry and want to eat fast!  This is definitely going on my must make again list.  Mr. John enjoyed it and for a soup he gave it 4.5 stars (probably because it had protein!)

Inspired by Cooking Light


Spicy Mexican Soup Serves: 4 Calories: under 500 Prep Time to Table: 25 minutes
Recipe : inspired from Cooking Light

-1 chipotle chili (from a can in adobo sauce), minced
-1 tsp olive oil
-1/4 cup chopped green onion
-1 tsp minced garlic
-1 tsp ground cumin
-6 oz. cooked chicken diced (Oscar Meyer grilled strips)
-29 oz. chicken broth
-15 oz. can diced tomatoes and green chilies
--14 oz can of corn (drained)
-can of black beans rinsed and drained
-1/2 cup water
-1/2 cup minute rice


1. Heat oil and add green onions, garlic and cumin and sauté about 3 minutes
2. Stir in minced chili and remaining ingredients
3. Bring to boil, cover and simmer about 5 minutes Notes: you could probably squeeze some fresh lime juice and top with crushed tortilla strips
