What's Cooking?

...well... not much... it is wedding week at the house and I've been busy getting ready.  Finishing up last minute stuff but thought I would share with you what I made for the bridemaids.  I found the black totes at the "dollar" section at Target (they were a little more than that), bought some ribbon and iron-on monograms and presto-chango - cute tote bags - each for about $4... hope they like them. 



I really don't know if I'll be cooking much this week.  Tonight for dinner I had some cashews and peanut M&M's - ha...

You Know it's Fall When....

... the first one of these comes out of the oven...a freshly made apple crisp with apples from our tree... and better yet Mr. John surprised me - I had no idea what he was up to!  That is until it started baking - t.h.e. most wonderful aroma!  Wish the screen had a scratch and sniff!

May the Force Be With You!


Last night we went to the Twins game with some friends....it was STAR WARS night.... we kept hearing Chewbacca sounds... Oh wait, that was Mike!  We all know the Twins are toast this season but it is still pretty fun to go to games, have some tasty beverages, food and play Twingo!


This was a delicious turkey sandwich!

We had pretty good seats...about 30 rows back of home plate....season ticket holders are "giving" their tickets away


Twins lost their 10th straight game - Here's hoping for a better 2012 season!

Happy McMornin'


Mostly my breakfasts are pretty boring - cereal - either Cheerios or Frosted Mini Wheats  - again pretty boring.  But this weekend I had a craving for an  "Egg McMuffin".  An interesting fact - I worked at McDonald's as a teen (X number of years ago!)  And I have first hand experience on how they were made from scratch.  I bet now everything is pre-made and nuked before you buy. 

So here is my recollection of how these were made.  Heat some eggs rings on a griddle sprayed with PAM


Break an egg into each and then take a knife and break up the yolk




Let the egg cook and before flipping it over, run a knife around the inside edge and start heating the canadian bacon on the griddle and toast the muffin - only the Thomas brand will do and fork split it...


Top the egg with the bacon and a slice of american cheese




I place a lid over to help the cheese melt faster
Butter your English muffin and top with the egg and it is done.  It hit the spot for me and Mr. John!

Friday Night Pizza


No "Papa's in the House" delivery tonight.  I was excited that I had the time to make real pizza and that is the best kind!  Over the summer I bought some 00 flour and according to other sites I've read, it makes the best crust.  The only place I have found it (without ordering) is Zzest in Rochester.
By Definition: 00 grade flour is a high quality flour which has a higher gluten content than standard plain flour, making the mixture stronger without being heavier, so it is ideal for pasta, bread and pastries.

I wasn't sure how to make the dough so I googled a couple sites and kind of played around with it.   I'll have to make it again to measure what I did so I can share with you.  Upfront I'll say I was thrilled with the results.  The crust was awesome.  Another *must* is heating your stone to 475 and then waiting about another 20 minutes before sliding the pizza on.  Cooking time was about 14 minutes.

2 pizzas were on the agenda - Mr. John loves Canadian bacon and pineapple so that was first up.  I had some pizza sauce from Cosetta's (in St. Paul) and used fresh mozzarella.



Cornmeal helps the dough side off without sticking on the pizza paddle








Next up was fresh tomatoes and green olives with a bit of freshly grated parmesan cheese




Doesn't the crust look awesome!

Leftovers are on the menu for lunch tomorrow!!!!  Along with the Lemon Chicken Orzo Soup from yesterday!  Decisions, decisions

Lemon Chicken Orzo Soup

Recently I went to Panera for lunch and ordered this wonderful soup on their menu. So lemony and deelish! The girl at the counter said it was being discontinued soon sooooo needed to find a clone. Googled and found this recipe today and with temps in the 50's it was perrrrfect!

A Perkins Omelette Wanna Be

 
My omelette making was inspired by Perkins.  I like how theirs are made; all wrapped up with filling inside.  So I set out to duplicate the look with the ingredients I had on hand - eggs and peppers.

Diced the peppers and nuked for a little bit to soften them up.




I heated a square griddle pan, sprayed with some Pam and added 3 well beaten eggs


Placed the peppers, some cheese and cooked until the egg is just about set but still pliable. 



Then turned in the sides and rolled it in thirds...a little tricky

I guess I could have made mine fancy by putting some toppings!  It tasted just fine and sometimes we eat these for dinner!
