Toasted Barley and Chicken Pilaf

Last couple of weeks have been quite busy and this is the first night I've cooked in about 2 weeks... how sad is that but we've either been gone or had commitments so I haven't been much of a Suzy Homemaker lately!  I was looking today for a comfort type food recipe and found this at the Good Housekeeping site.  Mr. John liked it and gave it 3.5 stars.


The barley was first toasted in a hot skillet

Prep - bite size boneless chicken thighs and veggies

The chicken is sauteed then removed from skillet then veggies are added

Barley, chicken, chicken broth are added back to skillet, bring to boil. cover and simmer about 35 minutes

Perfect meal for tonight and we have leftovers...

I also decided to take tomorrow off from work and don't work Fridays so plan to be baking and getting ready for the weekend.  I have 2 kinds of cookies to make plus the raviolis.  I also want to get the table set for Christmas Eve... I'm done shopping and wrapping....  things are looking up!
