Dinner and a Treat!

Happy Labor Day! Tonight I went to the garden to help me decide what to make for dinner.... we have lots of plum tomatoes, along with basil and parsley.  So most of the ingredients were at my fingertips and I didn't have to run to the store. As you have read before - if you have tomatoes, you can make dinner!

This recipe has been adapted from a Mr. Food recipe that I've had for several years and yes,....ooh, it's so good!  

Fresh plum tomatoes are quartered and drizzled with mixture of herbs, garlic, olive oil and S&P and then roasted for about 40 minutes in a 400 degree oven

While tomatoes are roasting and pasta is cooking.  Combine more herbs, melted butter and olive oil and mix in a large bowl.

Add spaghetti to above, remove tomatoes from oven and add to bowl and mix until well combined

Top with some cheese and serve.  John gave this 4 stars!

And since we cleaned our plates and it is a holiday - I pulled a couple of these out of the freezer.  I usually can't wait for them to defrost but tonight I am going to patient!  These are the cupcakes from Cheri's daughter's wedding - they are awesome - they may also be the reason I won't fit into my MOB dress when I go for fitting this week :-)

Roasted Tomatoes with Spaghetti Serves: 4-6 Calories: NA Prep Time to Table: 60 minutes
Recipe : Adapted from Mr. Food

 -12 plum tomatoes, quartered
-1 tsp sugar
-1/4 tsp salt
-1/4 tsp fresh black pepper
-1 Tbl dried parlsey (or ¼ cup finely chopped fresh)
-1 clove garlic minced
-1/2 cup olive oil
-1 lb spaghetti
-1/4 cup fresh basil chopped
-2 tbls melted butter
-Grated parmesan cheese

1. Preheat oven to 400. Place cut tomatoes in a 9x13 pan and sprinkle with sugar, salt and pepper
2. In small bowl combine parsley, garlic and 2 tbls of olive oil – drizzle over tomatoes and then drizzle another 2 Tbls olive oil and bake uncovered for 40 or until tender.
3. Prepare pasta
4. In large serving bowl combine basil, melted butter and ¼ cup olive oil. Mix well and then add roasted tomatoes and spaghetti – toss well and sprinkle with parmesan cheese.
