From Vine to Table

Tonight's meal was courtesy of our garden.  About 3 lbs. of tomatoes and a couple other ingredients and dinner was done.  I like this recipe because it is simple and tastes very fresh!  Also a good way to use up tomatoes you may have in your garden!

Start with fresh tomatoes


Cut a X in the top

Lower in boiling water for about 15 seconds to loosen the skin

Peel, de-seed and chop (if the tomatoes are a bit juicy, place in strainer for about 15 minutes)

Saute about 1-2 tablespoons of shallots in 1 tbl of olive oil until soft. Add half of the chopped tomatoes and simmer for 15 minutes along with S&P and some crushed red pepper (optional or to liking)

Meanwhile cook some pasta and after the 15 minutes add the rest of tomatoes until warm (about 3-5 minutes as you don't want them to cook down)

Add sauce to pasta, add chopped fresh basil and top with parmesan cheese
