Calico Corn Salsa

This is my new favorite app book... well until I find another one I like!  I kinda have a pretty big collection (which I will share with you some day :-)

I first saw it at a Home Depot checkout and talked myself out of purchasing and didn't give it another thought. Then a couple days later I went to my friend's house for coffee and she had it sitting out, had made a couple things from it AND ironically she said she bought it at Home Depot (it's not just a man mall store!) so after flipping through, I knew I had to add it to my collection.  I'm glad I did - lots of good things to try.  My first is here - called Calico Corn Salsa

The ingredients









Limes - the main liquid ingredient





Spices are cooked in oil to infuse the flavors and then added along with some other ingredients








Combing and mixing the ingredients...this should make some Packer fans happy!






Mix and serve with tortillas chips - this was a huge hit and between 5 of us, most of it was gone before we ate dinner!!  So I'll say it was a 4+ app

Calico Corn Salsa Serves: a crowd Calories: 107 per ½ cup Prep Time to Table: 20 minutes
Recipe : Taste of Home

Ingredients:
-1 ½ cups frozen corn thawed
-1 cup frozen peas thawed
-1/2 tsp cumin
-1/8 tsp dried oregano
-1 tbl olive oil
 -1 can (15 oz.) black beans drained and rinsed
 -1 medium tomato seeded and chopped
-1/3 cup minced red onion
-1/4 cup fresh lime juice
-1 tbl Dijon mustard
-1 garlic clove minced
-1/2 tsp salt
-2 tbl fresh minced cilantro

Preparation:
1. Combine corn and peas
2. In a nonstick skillet heat oil over medium; add oil and cook cumin and oregano for 2 minutes
3. Pour over corn mixture and stir to coat evenly
4. Add beans, tomato and onion
5. In a small bowl whisk lime juice with mustard, garlic and salt. Stir in cilantro and then pour over corn mixture and stir to coat. Best if refrigerated about 3 hours
6. Serve with tortilla chips
