Taco Thursday with a Twist


Tonight we had shrimp tacos and this recipe from Real Simple was quick and easy. 
The shrimp was marinaded in melted butter, chili powder and S&P...I like the zip the chili powder provides - you could adjust to your "spice" level!



Time to make the homemade coleslaw (would you believe this is the first time I ever bought a cabbage!  I'm serious!)
















The shrimp can be either grilled or cooked in a skillet but I would recommend grilling for better flavor






A warmed tortilla is topped with the coleslaw and then the shrimp... John really liked this and gave it 4 stars!



Oh and on a side note today.... there was an Elvis sighting in downtown Rochester!


Shrimp Tacos Serves: 4 Calories: NA Prep Time to Table: 25 minutes
Recipe : Real Simple

Ingredients:
 -1/4 cup orange juice
-2 tbls fresh lime juice
 -2 tbls sour cream
-salt and pepper
-1/4 small cabbage (8 oz.) shredded
-1 jalapeno minced
-1 lb peeled and deveined medium shrimp
-1 tbl chili powder
-2 tbls melted butter
-8 small flour tortillas (warmed)

Preparation:
1. In large bowl whisk orange and lime juice, sour cream, ½ tsp salt and ¼ tsp pepper. Add cabbage, corn and jalapeno; toss to combine – let sit, tossing occasionally for 10 minutes
2. In bowl, add melted butter, chili powder, S&P and shrimp – let marinade about 10 minutes
3. Cook shrimp either on grill (best way) or in a skillet until done about 3-4 minutes
4. Serve shrimp and coleslaw mixture in warmed tortillas
