One Skillet Dinner


Though not very colorful (hence the piece of parsley)- this dish had good flavor from the fresh parmesan cheese.  I think next time I might try adding either peas or grilled asparagus in it.  But try for yourself and see if you like!

Start by adding olive oil to the skillet


Add onions, garlic, mushrooms and thyme




Saute and add chicken



The next 3 ingredients finish off the dish


Along with fresh parmesan cheese and parsley... John gave the dinner 3 stars!



John set the table with these... we are out of regular napkins.... guess how old we are :-)
Though I won't say how looooong we have had the napkins!!


Chicken with Parmesan Rice Serves: 4 Calories: 400 Prep Time to Table: 30 minutes
Recipe : Inspired by Cooking Light

Ingredients:
-1 tbl olive oil
-2 tbls chopped onions
-1/2 tsp bottled minced garlic
-1/4 tsp thyme
-8 oz. sliced baby bella mushrooms
-12 oz. skinless, boneless chicken cut into small pieces
-1/2 cup dry white wine
-1/2 tsp salt
-1/4 tsp fresh ground pepper
-1 cup uncooked instant rice
-1 cup chicken broth
-1/2 cup parmesan cheese
-2 tbls chopped fresh parsley

Preparation:
1. Heat oil in large skillet over medium-high heat. Add onion, garlic, thyme and mushrooms and sauté 5 minutes.
2. Add chicken and sauté 4 minutes
3. Add wine and S&P and simmer until almost all liquid evaporates
4. Stir in rice and chicken broth; bring to boil, cover, reduce heat and simmer 5 minutes 5. Stir in cheese and parsley
