Penne Pasta Pronto

This recipe was on the easy side - Penne Pasta with Roasted Red Peppers/Feta Sauce. 

The ingredients (the crushed red peppers flakes and Kalamata olives are missing here- those were a last minute add)

First chopped the onions, garlic and roasted peppers (I had a jar of red and yellow peppers and decided to use those- I do think it would be awesome to roast your own peppers - will need to try that next time)

Sauteing the onions and garlic and then the peppers (along with the red crushed pepper flakes)

The mixture along with the chicken broth and feta cheese are mixed until smooth in a food processor

Mix with the Penne and add the parsley, S&P and Kalamata olives (if desired - which we did!)  This was good and we gave it 3.5 stars - next time I would add more spices - maybe try some fresh basil.

Penne with Red Roasted Pepper/Feta Sauce Serves: 2-3 Calories: 500 Prep Time to Table: 25 minutes Recipe : 2011 creation

 -2 tbls olive oil
- ¼ cup chopped onion
- 2 cloves garlic , chopped
-16 oz. jar red roasted peppers, drained and chopped
- ½ cup chicken broth -1 cup crumbled feta cheese -8 oz. penne pasta
- ¼ to ½ tsp crushed red pepper
-salt and pepper
- 2 tbl chopped fresh parsley
- 2 tbl sliced Kalamata olives (optional)

1. Cook pasta
2. Heat olive oil over medium heat and sauté onion and garlic about 5 minutes
3. Add roasted peppers and sauté an additional 5 minutes
4. Remove from heat, cool slightly
5. In food processor add mixture, broth and feta cheese and process until smooth
6. Toss pasta and mixture and season with salt and pepper
7. Plate and sprinkle with parsley and olives (additional feta if desired) Notes: I actually think roasted your own peppers first would be awesome!
