Ginger Peach Pork Medallions

Tonight's recipe comes from a co-worker friend Amber.  When we met a couple years ago, I learned that she had 3 girls under the age of 3!  This included twins... I was in awe and they are so adorable - each one with their own personality.  This recipe passed the "kids" test and also the "John" test  - he gave it 4 stars!  .

Ginger Peach Pork Medallions

 Cut the pork tenderloin in 1/2" slices

Cook on medium-high heat

Prepare the gingerroot (this smells amazing when grated)

Get peaches, brown sugar and cornstarch mixture ready

Add to skillet

Cook and serve
Very Good!!

Ginger Peach Pork Medallions Serves: 4 Calories: NA Prep Time to Table: 25 minutes
Recipe : Amber

-16 oz. pork tenderloin cut in ½ “ slices
- 1 tbl butter
- ¼ tsp salt
-1 can sugar free peach slices
 -2 tbl packed brown sugar
-1 tsp grated fresh gingerroot
- 2/3 cup chicken broth
-2 tsp cornstarch

1. In skillet over medium high heat, melt butter
2. Sprinkle pork with salt and pepper and cook about 4 minute turning once until brown
3. Stir in peach slices, brown sugar and gingerroot and cook about 2 minutes
 4. In small bowl mix chicken broth and cornstarch and stir into skillet; reduce heat and cook until thickened (about 2 minutes)
