Lighter Fare...

All day I was thinking - naw - not going to make dinner tonight - we ate so much on Easter Sunday.  But as the day wore on, all I could think of was a salad with fresh ingredients would really hit the spot.  And then I thought that John would probably like some meat with it so I came up with this sorta Greek salad.

I took some boneless chicken, cubed it and sprinkled with Greek seasoning and grilled it:






While that was grilling, I prepared the salad


In addition to the above, I also added Kalamata olives



I could have stopped right here but the grilled meat made it a complete meal and also grilled some flat bread to go along with it:


This was drizzled some olive oil and a touch of the Greek salad dressing:


On a side note - Danielle and I went to Greece about 3 years ago to visit her friend Megan who was studying abroad in Athens.  Here is a traditional Greek salad - no lettuce - fresh tomatoes, cucumbers, green peppers, red onions, kalamata olives and a slab of feta sprinkled with oregano and drizzled with olive oil - deelish!
