Spicy Asian Chicken with Noodles

Thoroughly enjoyed tonight's meal... it has a kick to it and the hoisin sauce gives it a distinct flavor.  You could control the spice by not adding as much chili sauce (of course we like spicy so did not cut back!).

Getting ready to cook:

First stir fry garlic, ginger; remove then stir fry peppers and remaining ingredients

Add cooked noodles and then after plating meal, add chopped peanuts... we really liked this and John said at least 4 stars!

Spicy Asian Chicken with Noodles Serves: 4 Calories: ~450 Prep Time to Table: 25 minutes
Recipe : Adapted from Cooking Light

 -1 tbl sesame oil, divided
-1 tbl vegetable oil
-1 tbl fresh grated ginger
-1 clove garlic minced
-2 cups chopped chicken (from roasted chicken)
- ½ cup green onions
- 1 cup chopped red and yellow peppers (1/2 each)
 -3 tbls soy sauce
-2 tbls rice vinegar
-2 tbls hoisin sauce
-2 tsp Aisan chili garlic sauce
-6 ozs. Rice noodles
-2 tbls chopped dry roasted peanuts

 1. Prepare rice noodles as instructed – rinse in cold water before adding to below
2. Heat 2 tsps of sesame oil over medium-high heat and add garlic and ginger; cooking and stirring for 45 seconds then remove.
3. Add 1 tsp sesame oil and 1 tbl vegetable oil and stir fry peppers for about 4 minutes
4. Add chicken, green onions, and 4 sauces – stir fry about 5 minutes then add in garlic, ginger and cooked noodles until heated. Sprinkle with chopped peanuts
