Fajita Wednesday

Getting back in the groove from vacation and needed to cook tonight.  The nights are longer and the temps warmer... so fired up the grill to make fajitas!

Pretty simple.  First cut about a pound of boneless chicken into strips:


 Add about half a packet of fajita seasoning and 2 Tbl. olive oil; mix and marinade in the refrigerator for about 30 minutes:


 Cut the peppers into thin strips - you can also use onion if desired:


 Preheat a grill grate and then add the peppers first to cook about 10 minutes; then add the chicken.  Both should then be done in about another 10 minutes.  I don't add any extra oil to the peppers - just let them get soft and slightly charred:


While that is cooking, I microwaved the pouches of black beans and fiesta rice and combined them in a bowl; also grated the cheese:


I warm up the tortillas by first putting a damp paper towel on the bottom of my warmer, then the tortillas and then another damp towel - microwave for about  45-60 seconds.  
 Remove the grilled veggies and chicken:
 John likes his in a tortilla - I usually just serve mine over the rice mixture:





 I think this is pretty healthy - grilled instead of fried and whole wheat tortillas.  4 stars - all that was missing was a margarita!

  3. Mike & I eat fajitas occasionally, and I think the Ortega seasoning is too much like taco seasoning. Have you tried any others? Also, a FB friend says Trader Joe's has good margarita mix.

  4. I think next time I go to Penzey's I am going to look for new seasoning... I like this one but don't love it! And if it EVER gets nice we can drinks on our deck and try the mix!
